I'm making cookies for a potluck next week, so I'll definitely post the results of that, but I probably won't have much time to bake randomly. :P I'll get back to this, I promise!

Okay, not so soon.

So, I finally got around to making another test batch. I decided to add salt (seems obvious now) and it really picked it up in the beginning. Sadly, once I added the cocoa, all hope was lost. Next time, I'll cut down on the cocoa! Thinking about adding baker's chocolate instead.
We ended up using butter with this batch because someone put the coconut oil I was thawing back in the fridge (coconut oil is hard to measure when it's been in the cold). The butter proved interesting to work with since I haven't baked with butter in quite awhile. I took it straight out of the fridge and into the mixer (later realizing I should have cubed it first).
We tried something new with our marshmallows, as you can see! They looked like little nests of eggs when we put them in the oven. Though, I noticed I seem to forget there are any chocolate chips in these cookies. So, I'll probably be adding more.

Testing.

For tests I'm making half batches. I'm working out the consistency and perfecting the taste. If anyone actually reads this and would like to taste test, I may be able to afford to send you samples.
The coconut oil is making tests come out... odd. The taste of it was barely noticeable, but the cookies turned into pancakes during baking. I'll try less oil and begin upping the flour, since that seemed to help the first text batch a bit. I may need to add more cinnamon since I don't really taste it... but I'll leave that up to my taste testers. I probably like way to much cinnamon!
